Our Story
I grew up in Switzerland, near Schaffhausen, in a family where food was never just food. My father has Italian roots, and whenever he returned from Italy, he would bring something special with him — among it, Carne Salada.
Here, it was hard to find. It felt rare, almost ceremonial. Thinly sliced, shared at the table, accompanied by stories.
That connection has stayed with me.
A Family Tradition
Carne Salada originates from Trentino, where preservation was once a necessity and later became a craft. Every family had its own version — small differences in salt, spices, and time.
For us, it was never about perfection.
It was about care, patience, and respect for the ingredients.
From Memory to Practice
Over time, I began making Carne Salada myself — at first to recreate the taste I remembered, later to truly understand the process behind it.
Salt ratios.
Cuts of beef.
Time.
Slowly, tradition became a lived practice.
The Shop
Today, the shop is run from home — by me and my partner.
It is small.
It is direct.
And that is exactly how it should be.
Every recipe, every product, and every decision follows the same idea:
Either you do it right — or not at all.
Why This Exists
This site is not here to reinvent Carne Salada.
It exists to preserve something meaningful, pass on knowledge, and honor its origins.
